TJ's should really start paying me now

I am sure every family has it's 'standby' dinner... the one you make when you're too lazy to really cook, you're not in the mood for what's planned or you get home too late for long prep. Ours is this:
SOOOO EASY! I start by making a batch of Trader Joe's cous cous, which only takes 5 minutes. Meanwhile, I saute really fast- onions and garlic in olive oil. Then I add fresh tomatoes & yellow squash- season it with kosher salt and freshly ground pepper. Put in four fistfuls of spinach and a little italian seasoning. When spinach is sufficiently wilted, stir in cooked cous cous. (The whole wheat is AMAZING... and nutritious) top with a sprinkle of freshly grated parmesan- dinner in 15 minutes! So- what's your 'standby'?

haha, you're clearly a lot more kitchen savvy than me. Our stand-by dinner is pizza from the freezer. That is often the "meal" I had planned and not a last minute "go-to" at all.

Standby = saute really fast, fresh tomatoes, yellow squash (like I just have yellow squash hanging around), pinch of kosher salt, fistfuls of spinach, sprinkle of freshly greated parmesan......hahahahaha, yah, that's me all right. I bet you have fresh parsley on hand for garnish, too.

My challenge would be to use the spinach before it "sufficiently wilted" right in the fridge. And if I had parmesan cheese, it's long since become a dry tasteless brick. I'm enjoying your recipes, though. They sound yummy.

PS, what exactly is cous cous?

That sounds so yummy. Bad thing David can not see squash not even in paintings. jajajaja I guess I can replace it with another vegi.

That is your Standby Dinner?!? Oh geeeeez I wish I was as food savvy as you are (I bet Rob does too!)

MY Standby Dinner is a box of mac & cheese. Or ramen. If I'm not feeling too lazy I may just add some hotdogs to that mac & cheese, however tonight I did not.

Wow Steph, my family would be so happy if I had a stand by dinner that fancy! Although ours would have to have NO vegetables for my husband and kids to be happy. I would say ours is Cereal or turkey sandwiches!
